I picked up a few pounds of beef back ribs at Costco last week. Finally got around to start the dry brine process tonight. I don't have pics but they are looking good!

I'm going to throw them on the smoker either tomorrow or Sunday. I'm very much looking forward to the end result. I want to use oak wood on them, but don't think I have any left. I'll likely need to pick some up tomorrow.

Smoked the ribs today for the US GP in Austin, TX.

Mac and cheese, baked beans with homemade bacon, pickles and and unseen salad.

I have to say I started too late and we didn't eat until nearly 8pm. The flavor was fantastic, but they were only cooked to about 190 degrees and I should have taken them to 203-5; rested for longer.

Texture was not as they should have been, but oh well. Next time. This was the first time doing beef ribs on the BGE and it started raining half way through.

I can't wait to do a smoked standing rib roast soon.

Unusually warm here in SE Wisco as the high was 79* and it was still 68* at din din time (5:00pm) so fire up the Weber

Haven't done one of these in awhile, so Saturday was the day!

SPG, and paprika over the top for some color.

Smoked until 116° (overshot by one degree lol)

Seared to get the nice grill marks and then a 10 minute rest.

Holy smokes.
