I picked up a few pounds of beef back ribs at Costco last week. Finally got around to start the dry brine process tonight. I don't have pics but they are looking good!

I'm going to throw them on the smoker either tomorrow or Sunday. I'm very much looking forward to the end result. I want to use oak wood on them, but don't think I have any left. I'll likely need to pick some up tomorrow.

Ma’s bday. So I made her mushroom neptune, a blue cheese burger with cheese fries, and strawberry compote on top of vanilla poundcake with vanilla bean ice cream per her request. Pictured is the classic American cheeseburger for my wife who isn’t a “stinky cheese” fan

I have to say I started too late and we didn't eat until nearly 8pm. The flavor was fantastic, but they were only cooked to about 190 degrees and I should have taken them to 203-5; rested for longer.

Texture was not as they should have been, but oh well. Next time. This was the first time doing beef ribs on the BGE and it started raining half way through.

I can't wait to do a smoked standing rib roast soon. 🤤

This was the first time doing beef ribs on the BGE and it started raining half way through.
Sounds like a typical British BBQ outdoor eating experience … :giggle:
