Made some ramen tonight. A quick broth made from a dashi base and homemade tare sauce. Bulgogi from the local asian grocery store. Fresh noodles. Poorly peeled and cut non marinaded eggs. Stir fried baby bok choy. Topped with lots of green onion and some toasted sesame oil.

I want a new general purpose chef knife in carbon steel. Need something that fits in a larger than average hand. I had my eye on this Bob Kramer knife for a few years:

My sister and BIL gave me a gift certificate to William and Sonoma so I could get one. Now I can't find a new one anywhere, never mind W&S.

Can anyone here point me in the direction of something like it? I'll use the gift certificate on other things; no loss there.

I just want a high quality knife that I can sharpen at home and use without busting my knuckles when dicing things.

Shrimp, bacon, and spinach; garlic Alfredo. Steamed broccoli. I made a basic broth from the shrimp shells and added it to the Alfredo sauce for more of that shrimp flavor.

2" NY Strip, pan seared then finished in the oven to medium rare.; basted in butter. Boiled then pan fried potatoes (bacon grease and olive oil). Sautéed green beans.

It was a good weekend.

Tried sous-vide for the first time yesterday. Ribeyes seasoned with salt, pepper, garlic powder, water bath at 130°F for 2.5 hr. Seared over coal, basted with garlic and herb finishing butter.
