Aha! What threw me was it looked like beef but I knew that wasn't right. I love Capicola on Italian subs!

Tacos de Conchinita Pibil. Used this lady's instapot recipe except I still wrapped it tight in banana leaves. To hell with all that digging a pit nonsense. This turned out perfect and didn't take 2 days.

Sometimes, it just doesn’t work.

Made Francis Mallmann’s recipe for “Tortilla of Cast-iron Fried Potatoes, Spinach, and Sun-Dried Tomatoes” and failed miserably. Simple recipe and ingredients that only require good cooking. Eggs went flat and the bottom got too done.

I know how to do it next time though. That’s something.

Shrimp “ceviche” tostadas. Ceviche is in quotes because of time constraints, heat helped speed up the process. Served with guac 2 ways. Grilled avocado w/ smoked salt and traditional

Oh yeah, dude. Occasionally I cook something that I scrape straight from the pan into the garbage lol…. and it’s OK.

That ceviche looks like the Noise tho! Bravo!

I didn’t make it but I just wanted to share it. Went to the OC Fair today and had a Captain Crunch chicken sandwich. It was actually pretty good together.

Made a BELT with cheese on grilled sourdough. I haven't had a BLT in soooo long, I had forgot how good they are! And yes, I waited for the cheese to melt before getting into it!

Beef tartare w/ grilled bread. Been working on this and it’s about perfected now. A frozen margarita pie for dessert. Had some friends over and everyone really loved both of these. Even the friend that “doesn’t like tartare”.
