Thermometer in that case is your friend!
I need to invest in a good thermapen. I've used a variety of thermometers, but they vary so widely in temp. I usually just poke it til feels done.

ok, chocolate chip cookies as promised. Had to go buy myself a mixer. I goofed and added the eggs and vanilla to the sugar+butter before I had whipped the latter. So didn't get enough air beat into them. Should have added a little more flour because of the extra 1/2 of an egg. And the beaters were the 'wire' kind not the far more effective bladed type.

I also didn't chill the batter before baking this first batch so these ran a little more than they should have. I'll do better on Tomorrow's Snicker-Doodles.

Trick of perspective, they are actually huge cookies. I only have to beg for Jello. The cookies just happen like magic.
The cookies are probably 3.5-4 inches in diameter. They are "breakfast" cookies. Also, what does a nice and short cookie look like I am so confused.

edit: also, Mik never HAS to say anything. My cookies are just boss- I mean they do have brewer's yeast in them :giggle:

I have apologized about the Jello. Cookies from scratch are just easier to make.

'shortness' describes the texture.
I don't believe they are short. I edited my previous comment to include one of the ingredients as brewers yeast and they definitely don't have a butter cookie crumble. Then again, I have no idea what the terms in baking actually mean.

NOW they look as they should!!

Kneeded by hand 35g of flour (I had improperly deviated on the eggs by 30g) into the chilled half-batch and added some chopped walnuts. 50g balls slightly flattened. Next time I'll use the standard chips, not these itty-bitty ones. That's what I get for buying them on a wing from Target at 9pm.

I kept the last batch of rub in the Jack bottle, and the Don Julio, well I just really like tequila.

8 hours at 275 degress, just about fell apart coming off the smoker.

Nice! is it your own rub? did a brisket 10 hours at 275 also. What kind of smoker do you have?
