Made some pan seared tuna today and it was actually very good.
Lime juice, EVOO, sesame oil, honey, red pepper flakes, chopped jalapeño, S&P, toasted sesame seeds, soy sauce. Let it marinade for about 40 minutes.
I tried cooking it all the way through last time I made it and I didn't like it. Pan seared and rare in the middle is the way to go apparently.

The house is being built now.Ate at Carraba's last night and their chicken soup is delicious. Found a copycat recipe to try out today since I also roasted a whole chicken this morning. Boiled the bones and skin down for the broth.
Samples were good, just threw the chicken in and I'm letting it simmer for a bit.

That would be a perfect meet up place. Little longer for you but I will be 10 minutes from the Daytona Speedway. As well as the beach. I saw where you visited FL, but I didn't know you were moving there. 2 of my neighbors are from Cali, I see there are a lot of people moving from the West Coast. We'll have to get together after you move and get settled! Dunno what kind of music you're into but I believe they have Rock Fest at Daytona every year, like 3 days of metal bands. One of my old coworkers goes every year. But the Don Garlits Museum is near there, the racetrack of course, plenty of other things. Damn, I'm excited for you!

Ribeye medallion with Gorgonzola whipped cream, fully loaded twice baked potatoes, and roasted carrots. Washed down with a new favorite Pinot.
Dessert kept with the taking advantage of fresh berries. Blackberry compote, vanilla whipped cream, and butter shortbreads

Oh boy, I’ll be down there soon and we’ll get together for some major feasts. That looks amazing. Great job.Made 30 pounds of Philly Cheesesteak sausages with a 17lb brisket, 8lb Boston butt and 5lbs of high temp mozzarella.
Took the leftover (you always have some left in the stuffer that doesn't get cased) and made a huge patty out of it, threw it on that long-sliced grilled sourdough. Tastes just like a Philly Cheesesteak...so good!
