Hey everyone I would like to get your opinion on what I should do.
I currently have a 2017 ecoboost mustang base with some mods, spoiler, grill, roof wrap, intercooler and tune.

I'm debating trading in my car since I have positive equity and 70k miles for a GT but what year?

I dont want a brand new car due to insurance skyrocketing and I already got a quote on a used 2019 gt and it will be the same price to insure compare to my ecoboost.

2018-2019-2020 are all a bit pricey even used so I'm considering a 2016-2017 model. Not a big fan of the 18-21 front facia restyle but then again they make what, 30 more hp?

What would you do? Go from a 2017 ecoboost down to a 2016 GT? Or save longer for a 2019-2021 model?

BTW the 2016 GT I see has 20k miles for 29k$ so I feel like thats a steal.

You 'll have to ultimately make the decision.

I bought a 2018 GT A/10 with 1,900 miles on it about 2.5 years ago and it has been absolutely flawless to date (just under 16K miles now).

First, I would want a third generation Coyote - it's a clear upgrade over the second generation. That means 2018 or later.
Then, between 2018 and early 2019 the shift forks used to be made of mashed potatoes and to break if you as much as sneezed over them. That leaves you with 2019 or later.
Now, between 2019 (say, Q2 or later) and 2020 it's a toss-up. The former has a puny little horn that sounds ridiculous, whereas the latter has a hideous antenna that looks like a misplaced can opener.
At least a normal horn can be easily retrofitted, while changing the antenna is a bit more complicated.
That's it, in a nutshell. :)

2019 manual has rev-match which is a nice feature that can't be added to previous years. Correcting the wimpy horn is inexpensive and not difficult.

Indeed, the rev match is awesome. Worth every penny. That in itself is a good enough reason to look at 2019 or later.

Everything 2016 and up should be fine. Considering the prices of used ones that are going up I would suggest ether buy brand new or 2016-2017 used GT one. Preferably with Premium and PP1 packages.

I should clarify, the 2016 GT for 29k is a premium performance pack as well and manual. And that forest green color which I think is only on 2016s?

Biased or not, but the 2015-2017 have the best looking hood, hands down. Definitely get a premium with performance package.

There's more than just more HP. Better transmissions, and options like Magneride and Active Exhaust. Both of which really make a big difference in the driving experience. And there's rev-matching for the MTs.

If you like or donā€™t mind an auto, Iā€™d save for a 5.0/A10. They absolutely rip

The color is Guard Green and it was also available in 2015. Hard to find now.

guard GT? best looking combination ever lol... every other color are dime a dozen everywhere...

and any GT will be an upgrade over an ecoboost... going from a fully loaded to a base gt, still an upgrade...

Let me ask you, if you saw a 2020 gt with 6k miles for only 32k... amazing steal? Or possibly something wrong with the car the dealers trying to hide? Lowest priced I've ever seen for a 2020 with basically no miles on it

Guard green gets compliments all the time. A 2016 premium performance pack is a lot of car.

I would focus on finding clean one that fits your budget and not so much on year model. I havenā€™t driven a gen 3 so I have no opinion on them.
Having a ā€˜16 Iā€™m partial to it, and would love a clean M6 in guard green.
