Either is fine. Unless its a HEP model, depreciation is negligible between the two and the mileage makes up that. The 20 has the new knuckle and rack but suspension is identical including the tuning. The question for you is newer or low miles. The cars are virtually identical

I agree. The ‘20 has the new design on the knuckle and rack. Not sure about the possible timing tensioner issues. I think that was a rare-ish issue with the ‘20’s and a non-issue with the ‘19’s. It’s something than can checked in PPI so not a real worry.

if there truly are no material differences (color, seats, equipment) I’d go for whichever car will have the longer lasting warranty for your use. Prob the ‘20.

if however there are some things you like better about the ‘19…. Dude, I bought a ‘19 with 4K miles. It may as well have been new. And I love it, old knuckle and all.

Let us know which way you go. Post photos.

I vote for the '20 over the '19 for the GT500 knuckle, the new steering rack and the suspension calibrations.
I had not heard of any such differences for non R's in 2020. Got a source?

...wait....I thought the 20 model year R had the new "GT500" steering knuckle set up but the base GT350 didn't have it. Am I reading that even the base GT350 had the GT500 set up in 2020?

I thought only the R got the new steering knuckle.

Quote From Ford Authority article:
Ford has announced that it is making some changes to the 2020 Ford Mustang Shelby GT350R that will make the car perform better on and off the track. Along with revisions for performance, the car will also be offered in some new colors. The 2020 Ford Mustang Shelby GT350R gets a redesigned front suspension geometry with a redesigned high-trail steering knuckle from the 2020 GT500

I think one of the benefits of the new knuckle is less tramlining. Although I hear that is evident on the 500, but not sure how noticeable on the R

Yeah I specifically said "non-R" because none of my 2019 interviews with FP yielded that ;-)
