As long as it has an ESP that will specifically cover an engine replacement if greater than a quart per 500 miles you're good to go but don't modify or "race" it.
If you purchase it plan on putting enough miles on it to get an accurate sense if it uses oil and how much before the ESP runs out. Check level every 250 miles to start with, don't add any until at lower mark. Odds are it'll be ok.
A lot of people on this forum aren't bothered by oil consumption but I am not one of them, especially since many many of these voodoos don't use any. If consumption is excessive to you but not within the severity to replace the engine, and especially if it seems to be accelerating over time, you'll have to decide whether to keep it or not. To me, putting in a quart of 5w50 three to five times between oil changes was a PITA. Gen 2 solved that when it finally deteriorated to under 500 miles.

As has been mentioned already, understand why a gt350 may be using oil. With super low mileage, you shouldn't have to worry much about user error (which is likely the cause of most voodoo problems) And if you get the car, don't be one of those who creates user error and then blames the platform. Assume 1 qt of oil per 500 miles when you first get the car. It may not use that much, but assume it will and check accordingly. Get a passenger side oil separator if not already installed.

Update ... got the car inspected at Ford. Besides the OEM battery needed to be replaced (it's a 2017 !!) and front tires wearing more on the inside (OEM Camber), the car is A1. I'm concluding the sale tomorrow. BTW, the car already has an oil separator:

You can save your front tires by dialing back the aggressiveness of the front end alignment without ruining the on road handling of the car. If you decide to track the car, then you would go back to factory specs.
