Anybody using on of these rear seat delete kits?

I am using one. Just note that it is molded carpet with no hard backing of any type. So it is light, but flimsy and nothing like the oem one. However, it is exactly what I wanted and serves it's purpose well. Easy to cut and install.

For the cost, it does a pretty good job. It's molded carpet to imitate the OEM rear seat delete from Ford Performance. It's very flimsy, however this can help manipulate the carpet how you want. I have a Fathouse Fabrications 4 point rollcage and the rear support legs have 2 angles, I didn't cut the holes exactly (guessed wrong) so I tried using some rubber grommets to hide the oversized holes. I do have another rear seat delete on order and hope to re-cut new holes to the proper fitment.
The Fathouse Fabrications 4 point rollcage didn't come with any instructions, nor do they have any made/drawn up. I get that it's Docol 8 steel and a different/stronger design than the Watson Racing rollcage, but I wish I would have went with Watson instead for many reasons. It's close to being finished, and with shipping I spent $1800 on the roll cage, another reason I should have went with a Watson.
Anyway, the Cover King does it's job and gives the OEM GT350R rear look for a fraction of the cost, just don't expect it to be perfect.

**Update 3-14-22**
The previous post/pictures you can see I have rubber grommets surrounding my rear support legs. The dimensions I took initially for the rear support legs were not correct, causing the holes to be oversized. I installed rubber grommets to hide the imperfections.

I was unhappy with this look and fitment, I decided to make a cardboard template to ensure I get the holes for support legs cut to the proper dimensions this go around. I also sprayed the back on the Cover King seat delete with a rubberized spray coating to help stiffen up the flimsy molded carpet, since it's nothing like the OEM Ford Performance delete.

Using these templates definitely helped get the correct placement in the rear support legs. I wasn't happy I had to spend another $120 on another Cover King rear seat delete but it was worth it, here are the finished pictures.

As you can see the Cover King actually turns out pretty good for the price, I'd definitely recommend this for a cheaper alternative to any aftermarket rear seat delete.

Does this kit come with the covers for when you take the rear seat belts out also or is it just for the rear seat portion

The plastic pieces? No those come with the rear seatbelts only. I have an R, I had no rear belts but the pieces/covers were there. I actually tried to find just those covers online with no luck. If you watch LMR install video the rear seat delete, they just use a razor blade cutting a slice in them and sliding the belts out. They then reinstalled tht cover for a finished look.
