I was not aware it was done for aerodynamic purposes on the Mustang, but other platforms it’s to reduce airflow over the radiator to bring a cold engine up to operating temp sooner, therefore reducing the amount of time and extra fuel compensated by the ECU to warm the engine up.
I think there is a thermostat that bypasses the radiator until the water is hot. At least in every other water cooled vehicle I've owned (~40).

True, but closing off the airflow will still reduce the amount of heat shed off the engine itself. We're at the point where even the small "percentage plays" represent measurable gains (at least on the EPA drive cycles).
