I agree with others about the immediate depreciation.
I also agree with others about the warranty situation.
That said, do the math and think about a car that has been sitting with old fuel and all the things others have mentioned.
Personally I wouldn’t do it.
Last June I picked up a new ‘19 that has a June ‘19 build date. Sitting for one year and a 5K discount off sticker I was comfortable with. That was right in line with low mileage ‘19’s being sold at the time.
Now with dealerships getting premiums for used cars, it may or may not be the way to go.
Also remember the ‘19-‘20 model years had some upgrades over the ‘18’s.

Depends when the warranty started? If you can swing a good price with full factory warranty you should be ok.

I bought my 2017 under the same circumstances. Build date March 2017, bought it in June 2018 with 140 miles. I knew it was a bit of a risk but paid under MSRP so pulled the trigger, warranty started the day of purchase. It had fully tinted windows so possibly it was used by someone at the dealership? I had the tinting removed as it was too dark for my taste. Just passed 3,100 miles with 0 issues.

I may take a shot at trying to find some more for a discount from other dealers who haven't had good luck selling them? My guess is $4-5k back of MSRP would be a retail price.

Unsold doesn't always mean new. If it has more than 10-20 miles on it, I wouldn't call it new.

Dealer demo’s in Merica not necessarily. Goes by in service dates Pal. Have buddy that bought not titled 19 in Dallas that was demo and time was ticking on 3-36. They threw in extra warranty to compensate on powertrain.
