driving modes

My understanding of the drive modes is that they change shift points on the automatic transmission. Steering mode obviously has its own toggle switch... so do the various driving modes actually differ in any way on a manual car?

Does anyone know if you can swap the lower section of the center console out for the premium package toggle set-up? Is the ecu is already programmed for the different driving modes that the premium offers? thanks in advance.
