Do you know anyone with the same vehicle? Swap ECM and see if it's the issue? I had VW Jetta, NEW, and it was throwing codes.. They had the car for a month and replaced the wiring harness, throttle sensor, etc.. and as a last resort changed ECM.. and it was the problem.
I think about it, but I owned some before I was 25 I had these...

I was looking at used GT350's... I was leary of how much they may have been beat on, even with only 5k miles. I take care of my vehicles(I almost always put 200k-300k on them, Sales Rep) and would only by new or certified. Even a certified GT350.. not comfortable with it.

Coyote is both Direct and Port Injection.. Port when cold and switches to Direct when warm... so is that preventing valve build up?

Seems alright to me. You have to get to St. Louis from Florida? Your going to have additional time and cost in that. Where I live, there are very few cars on the lots and I don't have time to trek 600 miles to get a car. I realize that I pay more most of the time compared to when I lived in...
I've looked up doing the same.. It's not bad.. change the 4 springs, add the camber plates(same time as springs), 2 sway bars, Splitter, spoiler, Gurney Wing, wider tires, lip molding.
I have not priced it.
