Well it's not the brakes or the calipers, I just had a shop look at it and tested it to see if they can replicate the problem.

You probably won't believe this, but it's your car battery starting to fail on you. It may pass the simple voltmeter test, but if you load test it probably will fail. I had the same situation for a while until I got a new car battery.
