The two engine harnesses are pinned differently from the factory to account for the different firing order and you could use the GT harness to go CPC. I would just re-pin the 350 harness though as the fuel pressure sensor is in the fuel rail on the 350.
Easiest fix is to buy and instal the sensor. It's about $30. Another option is to tap and insert a pipe plug. Third option is to measure the hole and find and tap in an appropriately sized galley plug.
I looked up your pistons with a 1.09" comp height as I remember the comp height of coyote pistons to be ~1.168". I'm not sure what Predator pistons stock are but the Voodoo is 1.161" for the increased stroke.

I had ordered a gen3, predator and voodoo rocker arm to compare them over a year ago. The gen 3 came with the adjuster.
I was surprised when I saw it too, and they interchange with Gen3 coyote. To be fair though, I believe if you order the Gen3 rockers, they include the lash adjuster.
I also went to FP as they used to have the predator rockers as a set but didn't see it there now.
I had just looked earlier today, parts.ford.com. $6 was MSRP, $5 retail.
