I avoid the dealership at all cost, but don’t want the hassle of amateurs tools so I take a hybrid approach: I buy the correct oil and filter myself then take it to a local, independent mechanic along with the filter wrench. I look for places small enough where they don’t mind me...

The 7500 miles applies to cars that don’t meet California emissions. This wouldn’t apply to the GT350 since it’s a 50 state car.

I'd say it would be easier just to drive it sparingly, like once or twice per month. Yes it will get some wear and tear, but it will be competing with other cars for sale with wear and tear too. Since the OP already has one car, I think it's a better move to buy a good used one in a few years...
