The second tire configuration is what I have now on my 2018 GT350, and it works great.
As for the gas mileage issue, you're stuck with that on a GT350. This isn't the car for anyone who's worried about gas consumption. That's what Hondas are for.

Availability, or lack thereof, might make this decision for you. A convenience package GT350 is tough to find, especially if you're looking for a specific color or two.

The convenience package is the way to go if you're not doing that much tracking. The heated/cooled seats are great and more comfortable, IMHO. (I drive my GT350 during cold weather in the Northeast, and the heated seats were a must.) Getting in and out of the GT350 with Recaros is tough because...
Because the analog gauges are old-school and cooler. I test drove a new GT PP with the digital dash and didn't like it at all. I'm glad they stayed with the same dash for the Shelby.

I don't see a key detail here, unless I'm missing it elsewhere: What's the exterior color of your GT350, and the stripes' color, if you have them? That makes a difference.

Fair point, although there are other gauges that tell us temperatures under 100 degrees.
I would assume the trans oil gauge is all about being on the track, not street driving. So Ford geared it toward that, ignoring the lower temps.

I just went on a very spirited 40-minute test drive through some backcountry roads with a lot of hills and twisties, pushing the car as hard as I could without it being (too) dangerous. Revs often above 7K...
