If you’re not going to put the car on the track, don’t waste your money on an R. I have a 2016 GT350 and take it to the track about 3 times/year. An R would be even more fun.

You have the correct part number. I actually called Helm to ask them if it covered the GT350. It does. I looked through it a little more tonight and engine, tranny, oil coolers are covered. I'm pretty confident that it will do the trick.
My car was dropped off at the dealer on 2/9 in their snow covered parking lot. I drove it more than once in temps below 40, but not by much. Grip was Ok. I would use caution below 40.
I just got my helm CD. I looked up the brake pad R&R procedure. Looks very useful, complete with CAD images.
Also, checked owner.ford.com for the oil cooler recall, which showed up. I didn't see anything obvious there regarding TSBs, though.

The alignment card that comes with the owners manual recommends 28 psi. This is for the TRACK. I called FP and they said the lower than normal pressure is needed because the hard running on the track causes them to heat up more than on the street. The exact opposite is true of autocross. Have fun!
