I believe your clutch pedal is missing a pad that makes contact with the plunge switch. If the pad has deteriorated (which happened to me) there is a hole where the pad stem attached to the clutch pedal arm. So when you press clutch to start the switch plunge passes through the hole instead...

I owned a 2012 V6 it's was a really great daily driver on 87 octane. You will not get any more performance out of the V6 running octanes greater than 87 unless you have it tuned for it.
The next time it happens see if the mirror is not adjusted to your normal view and make note of it. Any observations such as when and how long an event occurred would also be helpful to the dealership. If the backup display is still looking strange take it in.
