If the garage sold the car with the unichip fitted then surely it is their problem to fix or pay an expert to fix?
Quick read of the unichip info and i like the idea of the anti theft map but other than that doesn't sound worth the effort but that's just me.
problem is your odometer will read in kph and any speed related actions taking the speed input might also be kph for example cruise control / ABS / power steering. I think in another thread some folks gave you pointers for garages / specialists near where you will be in the UK so i'd be speaking...

yeah my parents old Renault Scenic is this, button for the handbrake and it auto releases when you put some power through the clutch and off you go. Most modern EU cars are like this and we wonder why folks can't drive when it's automated so much.

sounds like the same as i had on my 17 GT also RHD - the mirror will have moved off the adjuster legs / fixing points so if you very gently wobble it back into the housing you will feel it 'slot' into place and you can then adjust with the armrest buttons
i feel your pain OP. LIke you say there are plenty examples of these cars being driven hard or otherwise an doing 100k miles without anything other than routine maintenance, others seem to be more problematic.

flexi socket for your ratchet helps with the rear bolts. Quite cheap to get and use see if it fixes the leak. TBH if you try tightening them with your fingers you'll find the slack ones pretty quick as a couple of mine were that loose but obv check them all properly.
check your valve cover bolts, Ford has a habit of not tightening them up and they will back up. I had the same on mine though opposite side from you and I had oil drops on the garage floor under the exhaust where it dripped down. You might need a flexi socket extension for the under windscreen...
