I had 15x10 beadlocks on my 2020 gt500 before. Offset was for a normal 2014 mustang. 50mm I think. I cruise around on a set of 18x11s. I'd prefer 18x11.5s.
They are off of my 2020 GT500 with around 30k miles. In decent used condition. Not perfect. Only small scuffs and scratches from normal use and a lazy first owner lol. Comes with tpms also. On car and working just fine. Pick up in Vero beach FL 32968. Or meet within an hour drive. PayPal...
I did the entire swap to smaller race brakes on my 20 gt500 and even fit 15x10 beadlocks on it. You'll need basically the entire front suspension and knuckles/brakes. The rear is the same plus gt500 axles. I have them all sitting in my garage from my drag setup swap haha.

Not sure if this info will help you or not, but in hptuners there is a tab in the speedo settings to either use the ecm or bcm files. You can click that icon and use the pcm tunes numbers or leave it unlocked and use the bcm. Just going by memory on when I tuned my 2020 gt500.
I've done a bit of work on mine but now it's hotter than Satan's ass crack in Florida. Plus nearest track is a 2 hour drive. If it broke something it would be a long tow.

I'm fast approaching 30k on mine. I daily drive it about 75 miles round trip. Drop my young son off to school and I always hear kids making comments on how cool it is.
As far as smell...yes your car smells rich and has a burnt fuel smell when idling. Can't get around that when not running cats unless you lean it out considerably maybe.

You will if you don't either keep the valve Motors plugged in or use active exhaust eliminator plugs. For now I have mine plugged in and zip tied up. But I ordered eliminators from jegs for $50.
I built my own cat deletes and did an hpipe that removed the stock resonators. I just blew one of the valves out on my drives side muffler. I cut both mufflers out yesterday. So it basically has zero muffling. So now I'm putting a magnaflow dual in/out muffler in the middle resonator location...
