I’d like to replace my shift boot with one in the same color as the cream leather. I’m having trouble finding a leather shop that can match the color and texture.

Do any of you know the exact color name of this leather? Even better, do you know what Ford used, or even who supplied it?

The color is cashmere. That is a cool idea. I don't know of any site that sells that specific leather shift boot. I know of this site, but it doesn't seem they have the exact same color. https://leatherseatskins.com/products/2015-2018-ford-mustang-custom-shift-boot-manual/
I don't know how well something like this spray dye would work. https://www.amazon.com/Colorbond-346-Cashmere-Leather-Refinisher/dp/B00G6IQ9NC?th=1

I was thinking of buying that for a scratch I had on my seat but they don't shit aerosol products to Hawaii. I ended up going with this company https://leatherworldtech.com/ . I don't know how well the bottle dye would cover black leather. Maybe you can email or call them. I can say that only the surface is cashmere and under that is black. The dye covered that small scratch well. I don't know how it would do on a whole boot though.

What ever you decide, please post it up. I am interested to see the final product.
