I just lowered the car on Eibach Sporlines and upgraded to a 305/35/20 in the rear and 275/35/20 Nitto NT555 G2 instead of the stock PP tires. As you can see the rear sits a lot lower then I thought it would and I really wanna keep the 305’s should I just roll the fenders or something else because the rear does rub every time I hit a bump.

I have a 2019 PP2 w/10.5 rims & 305/30x19 tires (F) & 11.0" rims & 325/30x19 tires (R). So we know that your tires are not the issue here. Are you running Ford or an aftermarket wheels? From the offset of the rear, I would venture to say aftermarket. Since it's only the rear tires that are giving you a problem, you might check & see if the same design is available w/slightly less offset or in a narrower rim size (the 305/35x19 tire works w/a 10-12 inch rim width). As for 'rolling the fenders', I don't know about the 2015-2017 Mustang, but the 2018/19 Mustang has no fender 'lip' to roll.

You can add negative camber to the rear to get them to tuck in under the fender. What are you at now?

To start, your rear tires have a diameter of about 28.4” now instead of the factory 27.7” the pp cars come with. Your car isn’t sitting lower in the rear, your tires are too tall. That’s why your only issues are in the rear. If the diameter was the same front to rear, you’d more than likely have no rubbing issues. A 325/30/19 is less than 27” tall, that’s primarily why @Ron doesn’t have any rubbing issues. A change in offset would do the trick but that would require buying new wheels. I would suggest more camber as @PoppinJ recommended or switching to a 315/30 might alleviate the issue as well

So I’m allowed to go from a 305/35/20 in the rear to a 305/30/20 on the same rim and how can I change camber is it when they do a alignment cause I haven’t got one yet just waiting for the springs to settle in

Take a rear wheel off, and look at the stamping on the back of the wheel spokes. You will find the wheel specs - size, bolt pattern and offset.

That will help with resolving your issue once you know what offset you are working with.

There is some camber adjustment in the rear from factory but from what I understand, it’s not real easy to dial in. But to answer your question, it should be adjusted when an alignment is performed. You could go to a 305/30 but then your rear tire diameter would be smaller than the front. Ideally, with a 30 aspect ratio tire, you’d want a 315 or a 325 to be as close to the diameter of a 275/35 if that’s what you’re going for. Depending on the tire, going wider may make your rubbing worse as not all tires are created equal. I would think that you’d already have some pretty aggressive negative camber with the sportlines. I’d just have your alignment performed and as stated above, check the wheels for the specs and hopefully that’ll give you an idea of what needs to happen

Right. The service manual says toe is affected when rear camber is changed.

Also I thought about just buying different springs for the rear with less big of a drop but I’m not sure if I would be able to do that and keep the Eibach sportlines in the front

FWIW I'm running 11' rear with 305/35/19 and 10" front 285/35/19 front. Rear camber is -1.6 still in spec. No rubbing issues. Camber can make a difference.

Well I believe the front is rubbing now maybe because they settled in it’s making a strange squeaking sound I didn’t have any time to remove the wheels but I think I’m just going to go with a springs with a less drop or a coil over

The combination of a 305/35/20 tire and those springs is the issue in the rear. A 305/30/20 would have a much better chance of fitting. Your idea of switching to springs with less drop is a good one, though. I've seen some negative comments about ride quality of the Sportlines.
