I swapped mine in my driveway and it took longer to get the car in the air and the wheels off than to do the swap.
it is literally 6 bolts and a bleed per side.
I.can't imagine a shop charging more than 2 hours labor.

I agree, its only a few bolts. The worst part will be messing with bleeding after the new calipers are bolted on. Shouldnt be more than a couple of hours plus the price of a brake flush.

I ordered the Brembo upgrade kit for my GT and wanted to get an idea of what a reasonable price would be to have this installed at a shop. The kit includes the 15" rotors, 6 piston calipers and brake pads, along with dust shields. I would also have a brake fluid flush done along with it. What is a reasonable price I should be looking for altogether when I call local brake shops?
If you're upgrading the brakes specifically for the braking performance, I agree that you should be learning how to do this yourself if it's at all within your physical capabilities.

Mainly for appearance - maybe not. But at the very least, don't pick a shop to do this based on price alone. Find one with a good reputation for handling performance upgrades.
