I would recommend FP Track Springs and dampers or Steeda Sport Linear with same dampers. Both of those springs are a 1" drop and have a favorable spring rate IMO.

What is the 2018-2019 GT Stock Spring rate? still 160 / 668?

Would 2018 base shocks handle the steeda minimum drop spring at 200/750? long term? thought shocks wear out faster the lower the car is or the higher spring rate will kill it faster? Steeda has a nice 0.5 subtle option vs 1" offerings. Does anyone possibly know the actual spring rate for Ford Performance M-5300-X set

Probably about as well as base shocks with base springs after something like 30,000 or 40,000 miles, except that's where you'd be starting.

So you mean it is as if I shaved off 30-40K miles off the life of my stock shocks, once I put 0.5" drop springs on?

Imagine what your stock dampers would be like with stock springs 30k - 40k miles from now. That's about what the stock dampers would be like the minute you install the min-drop springs. Not entirely dead, but more 'floaty', less able to control any 'bounciness' or flat-ride issues; not as much rebound control as you have right now.

So if I upgraded to PP shocks/struts, would it now be 15K-20K? Or I got to go full out with Ford Track shocks/springs to handle 0.5" minimum drop 200/750 springs to handle it decently?

I'd definitely step up past PP1 dampers, especially for springs that are that much more than base (160-ish, 670-ish). PP1 damping was noted as at least a minor deficiency in one of the earliest reviews, and there have been more than a few threads concerning "bounciness".

I am now happy with the approach I took, the Ford Track Shock/Struts and the Steeda 200/750 Linear for just a Daily Driver on CA roads

Just an FYI for those that did not know; the Ford Standards Certification label that is found affixed to the Driver Side B-pillar, seen upon door exit/entry contains many build codes.

In those the fields of codes, the FRONT and REAR factory spring codes are listed. The attached random image of a Standards Certification label is from a 2016 GT350. The spring codes can be found under the field labeled “SPR”, circled in blue.

I’d like to see a spreadsheet that captures as many of these factory spring rates as possible to see if there is any crossover between S550 models/years.

Anyone game?

My 2018 EB w/PP, the listed SPR codes are:
BBHH

EDIT:
In the example label, my blue circle encapsulated “CMC” but that needs to be excluded, as that is part of the last line of the label coding (sorry for any prior confusion).

Also, does anyone who may work at Ford or a Ford Parts House know the correlation of the codes back to actual spring rates?

55BB on my '19 EB without PP. Still, nobody has the rates for EB or EBPP?

Base Ecoboost here and I'd also like to know spring rates for my car so I can make a better choice although, I've had the Ford Performance Track Handling Pack in mind all along. My stock springs are AABB.
