I ran that setup with +30

Here’s a pic of mine with 19x9.5+30 275/40 PSS , tired to get an angled one so you could see there was a tiiiiiny bit of room you could go in the back out more.

Doesn't a 275/40/19 square setup screw up the speedometer (by like 1.5 mph) if the original equipment from the factory was 255/40/19?

no, calculated from the rear axles. Speedo was 100% dead on according to GPS.

Is that b/c you had the performance pack to begin with (i.e., a 275/40 rear tire)? I guess I'm wondering about the situation where a stock mustang originates with 255/40 square and you jump to after-market 275/40. Logically that seems problematic (though perhaps not in your case).

Yes sir! It was a PP car. If you have a tune you can ask them to recalibrate the speedo to your tire size, and even ford can do it if you ask.

They we're MRR GF9's powdercoated their liquid silver color. It looked really good in person, super metallic and a normal silver in the shade but almost bright metallic white in the light due to how metallic they were.

My PP with with stock 275/40-19 Pirellis actually read a little slow and now reads correctly with 305/35-19 Nittos. Rarely do factory speedometers actually read accurately with factory tires.
