Ukrainian borsch (beet soup).
Beets (obviously), carrots, onion, potato, garlic, beans (white) in a chicken broth (homemade). Seasoned with dill, vinegar, salt and black pepper.
Served with a dollop of 14% BF/MF sour cream and dill.
Delicious and excellent "pipe cleaner" after consuming a few bowls.

Are you Ukrainian? I'm a mix, Ukrainian and Polish. My grandmother (100% Polish) use to make white borscht every Easter. She would get the hard boiled eggs and kielbasa blessed by the priest. Which meant every family member had to have some at dinner. It was disguising and every year I think about if I would like it now as an adult. It did not look like this, which looks delicious.

I'm 50% Ukrainian, 50% Polish with this breakdown - Dad was 1/2 & 1/2 as was mom...
Both my Gidos were Ukrainian, both Babcias were Polish. My 2 grandfathers were born in the same town in Ukraine and came to the same town in Canada. They grew up best friends. My grandmothers were neighbours (neighbouring farms) in Saskatchewan. They moved to Winnipeg, met my grandpas, and the rest was history. Now on to the food....
This borsch(t) is more the Ukrainian version that both Gidos liked, but we also had the clear borsch at Easter as well. Christmas was this borsch with mushroom pierogis.
My grandmothers also did the food blessed by the priest thing - including the Easter bread - Ukrainian paska and Polish babka - similar recipes, different shape. Such good memories :)

Lotus Biscoff crunchy spread swirled into the filling.

Lotus Biscoff melted and drizzled on the top.

Crumbled ginger biscuit topping.

Resse’s mini’s.

The DAD is made from a Lindt Easter bunny that she melted down (she doesn’t like Lindt so donated it for my cake).

This is not a good option if you are on a diet ... :giggle:

Erm, no ... :cwl:

I had a three cup slice.

Then I had the three cups from my daughter’s slice (she doesn’t like those).

Then I finished my daughter’s slice.

Now I feel sick ... :facepalm:

I gained 3 lbs just looking at it. Happy Birthday!

Got some fresh "hand delivered" hatch chiles from NM the other day. Roasted, peeled, and deseeded them tonight. Planning on making the best enchiladas tomorrow.

Now, that's just sweet. Good kid! I hope my kids would make one for me as well, but they'd rather make salads than cakes (thanks to the influence of their mom).

She’s a good kid :like:

I think lock down and the kids ‘bake off’ (do you get an equivalent over there ?) have played a big part.

She did this chocolate fudge cake for my dad in February (everything herself including the fudge) :

She’s perfected her buttercream now, in particular fresh strawberry and lemon variants :inlove:

It’s my mums birthday tomorrow so she’s baking a lemon cake to take down tomorrow night - but unless we are able to sit out in the garden, I won’t even get a piece of that ... ! lol
