Since we don't have an official order guide for the 2020 Shelby GT500 yet, here is what the dealer ordering system shows. Keep in mind these options might change once everything is final.

As much as I want this to be true it doesn't look like it to me. I see one interior color and two leather trimmed seats, either Sport or Recaro. Those seats have both been shown to have white or gray accents, with the Recaro being rather pronounced. A disappointment if true.

Might be stupid question, but what is the difference between ebony stripes and shadow black? i believe its a subset of vinyl vs painted, but I just want to confirm.. anyone know, and which is which?

I saw both last weekend and it would seem you are correct. Fwiw, the Recaro was fugly, the base not so bad but not good.

Please be kind i would like to understand how a car is ordered, as seeing all the options has me intrigued. How does the dealer/salesman go about ordering? I assume the ordering guide is the key. But does this system have any smarts/logic built in? I assume it wont allow you to combine/duplicate options. Surely it isn't dependent on the guy ordering to know this crap.....For instance i see option (13L) Pedestal Spoiler, which i thought was only available on the CF Track Pack, is it possible this could be had outside another 'group' package? Or is it more likely its only available in the CF Track pack option even tho it has its own option code?

I could be wrong, but I think this is just a list of all options available. Some options will not be available unless you order the correct package. It will not allow them to order duplicate options. The pedestal spoiler will probably only be available to the carbon fiber track pack. You are right that the order guide will be key. You can also change some options after you've ordered until the order is pulled.
