When I first test drove the car, and for the first ~1500 miles of its life, the shifter has felt very smooth and easy to operate. No unusual noises and took very little effort (while offering no feedback) to move around.

Now it seems that overnight all of that changed. It takes considerably more effort to put the lever into each gate and I now get a notchy feel to it.

While this is not an issue, and I actually like the more positive feedback I'm just wondering why this would have happened all of a sudden? It feels like I put in an aftermarket shifter in there overnight with heavier throws and notchy feel?

A drastic change like that overnight is not normal. Check your clutch fluid level.

Yeah, check the clutch.

Also changing the transmission fluid is a relatively cheap and easy thing to do, but I wouldn't expect a noticeable degradation in feel in the first 2000 miles, unless perhaps its getting cold where you are.
