3.73 gears vs the rest?

I think 3.73 gears are the best for this car but why do people change them out? Also if shelby america upgrades the gears on gt500 to 3.73s wouldnt you think is for a good reason?

Yes and no. I don't know about the GT500 but it depends on the transmission as well.
The manual transmission is pretty close ratio for a car like the Mustang. I have 3.37 and it's already a lot of shifting just to get to 50mph. Can you imagine with a 3.73? You are gonna be in 6th gear once you hit 45mph.
The other thing is grip, a lot of people go supercharged will have grip issue with 3.73 because the ratio is much closer and when you spinning gear though 4 gears, it's not gonna go fast.

For DD, I would prefer 3.31 to 3.73.

I daily a pp which has mt82 with 3.73s. I don't understand the complaints. You can easily skip shift with that gearing if you prefer less shifting. 1-3-5 or 2-4-6 works fine.

Gearing to match power band.
Gearing to maximize traction.
Gearing to maximize acceleration stats.

Stock GT PP with 3.73 is designed to maximize acceleration stats.
Shelby Super Snake has 3.31, I think, to maximize traction.
GT350 3.73 to match power band.

For whichever reason, I think 3.73 is best choice for PP. 3.55 for non-PP.

T56 does have different transmission ratios so 3.73 might be closer to 3.55 on MT82.
GT350 is does have different transmission ratio but pretty close to MT82.

2018 GT is reported to have significant increase in torque requiring twin-disk clutch and stronger transmission. So they've change the ratio closer to T56 double overdrive style. This lowers the torque on outputshaft and increase transmission input torque rating. And reported to keep 3.73 so it will comparatively have around 3.55 in 2015 spec cars. Which is Ford matching gear ratio to new power band.

Not an apples to apples comparison. The GT500 has a different transmission with different gearing.

Not everyone wants steep gears in their cars especially when going F/I.

I ran 4.10's on my 97GT auto lol but of course that was a totally different transmission than today's.

I ran 4.30's in my Mach 1. But it needed a lot of gear. These cars not so much.

For the mt-82 3:55's are perfect, for a tremec trans in a gt-500 3:73's are ideal. the mt-82 is geared so much lower compared to the tremec that 3:73's in the mt-82 are equivalent to a tremec using 4:10's...

For auto's, which are geared lower then the mt-82 3:31's are perfect but i like my 3:55's.

And yet most can't seem to grasp this. I mean if 3.73's/4.10's worked in their 1993 fox bodies it works in these new s197's/s550's correct?:headbonk::)

Most people change the 3.73 because traction issues after adding significant more power. Perfect for N/A power but after that it seems people struggle for traction for 1-3 gears. I think for a stock, FBO manual they are perfect is they keep you in the powerband it pretty much all times. You get nice low end grunt with them and when you are on the twists, it's extremely fun to shift the gears. I'm not sure why you'd every complain about having to shift gears when owning a manual. When you are getting into and just cruising, skip gears...
