the max cooling package will help with track days. includes an extra LTR (so you have 2) and then also an extra engine radiator. this is standard on the 2020+ Stage 3 roush vehicles for track use. the Stage 3's also get an upgraded transmission cooler (autos) and a differential cooler on all.
the 18+ roush head unit and intake manifold would "fit" but the DI rails limit intercooler core size on the 18+ so you'd be sacrificing intercooler size for "no reason" on a gen 2. you'd have to do some experimenting. Throttle body plugs are also different so you'd have to do a custom harness...
the rubber versions will deteriorate over time with high rpm/hard use so they swapped to the fluid style like you said pre 2019's had. Ford discontinued the "fluid filled" ones. They actually are made by fluidampr for Roush it says it on the outside of them. Specific part to Roush it looks like...

do you have any codes? its hard to tell on video but these cars normally sound "vacuumey" at idle if that makes sense haha. the lines on the side of the blower with zip ties on them usually have constant tension clamps on them but i dont think thats where any noise is coming from.
there is already a temp sensor in the car, you can just read "IAT2" it is post intercooler.
if you wanted to add your own, there's a NPT port on the passenger side near cyl 3 that is used for a boost gauge tap, but if its open you could put whatever you want in there.

seems like a bad idea to plug the only drain in the intake manifold for oil to escape. Roush specifically puts that drain tube there in case any oil is collected in the lower bowl, it recirculates it and disperses it to be burnt by the engine. With the UPR can, any additional oil it doesn't...
the injector spray pattern will be different/hit a different spot on the back of the valves if you raise up the intake manifold with the spacers. the best upgrade is to upgrade the pump and add fans to the LTR or go to a larger LTR if you dont want to do a killer chiller.
