OP, what year & package do you have? 2016 tech packs didn't have tranny or diff coolers and would require less fluids.
If you have a '16 track pack or 17+
Get 3liters of tranny fluid & 2liters of diff fluid. Both systems hold more fluid but it is hard to drain each system entirely during...
As I understand, the factory caster/camber plates are shipped with the car and installed by the delivering dealer. But don't take my word it, hopefully someone who own's a '19 can chime in
I've used OEM, BG, and Motul. Motul is the same cost as OEM, BG is a little more expensive. I try to minimize consumable costs where I can and found that OEM usually fits this bill.

The pilot super sports work great as a noob track tire/dd, they make good grip wet & dry, they're forgiving as well. Working my way through my second now.
295 & 305 4S tire sound like a good bet too.
If you look for 305/30/19 tires the options open up quite a bit.
The Gilbert/Chandler is a very nice part of Phoenix metro area IMO. You can download the "pure gas" app, it also shows locations & octane ratings.
Also, Gilbert/Chandler is a bit of a drive to Scottsdale for gas. You'd have better luck going to the one's @loco_GT350 and I mentioned since it's...
I live in Gilbert. The closest 100 octane pump is at Chevron right next to Wild Horse Pass (approx 20min drive from Gilbert) and costs ~$8-10/gal. The next closest pump is at Tom Thumb (see link), which is approx 40min from gilbert.
