I'd go with 275s and a 20mm spacer. Dont expect a huuuge gap difference tho, from 255 to 275 theres only 8 mm of sidewall difference. The big change is gonna come from the spacers, since the tire sits closer to the fender outwards, it gives the illusion of less wheel gap

Well if you installed the plate with the valve that came with it you dont need the catch can. Try going stock style and see if that solves it
