Only hard part is dropping the stock part, as it is all one piece. Actually easier to one man it on jack stands since you can just lay one end down then go to the other to finish. On a lift you really need two people.

That seems high. I never see over 194 now, even sitting in traffic on a 90 degree day. Not sure if the PP radiator is the sole reason for that big of a difference.
If you drain the radiator down using the petcock on the bottom passenger side it is an easy not too messy job. You will still have some coolant sitting above the old thermostat, so have a towel or something under it.
