Actual dimensions for the specific tire make & model matter more than wheel diameter or 5 points of profile (as far as the 'stretched' appearance is concerned). 285/35-18 Michelin Pilot Super Sports (10.2" claimed tread) are about 11.8" wide when mounted on 18 x 11's. Forgestar F14's in this case.
The sidewall rub strip sits outside the wheel flanges by about half a mm (feeler gauge measurement).
None. Get a tire that fits the wheel or a wheel that fits the tire. As Norm said, there's a range of widths that are acceptable. On an 11" that is 295, 305 and 315.
Actually, there are two profiles in 285 and even 275 that are industry-OK'ed for fitment to 11" wide wheels (specifically 40 and 35; the rim width ranges for 30 and 45 in those widths stop at 10.5").

According to Pirelli's website, the stock size PP rubber is at the recommended limit on a 10" front and 11" rear wheel. They're stretched, but I'm running mine this way until they're shot, then it's time for a 285/305 set.
