Also, is 285/35 a good fit for a 19x10 wheel? I like when the tire sidewall is flush with the wheel rather then stretching or having it bulge. Would I be better off with a 275?
275 and or 285 both are solid options for a 10"

which size gives the flattest sidewall....275 or 285? I hate the stretch or bulge as well.

So if you don't rotate, then they develop uneven wear, which means they will need to be replaced sooner than they otherwise would, which means the tire life is effectively shortened....
With properly aligned suspension you shouldn't be wearing unevenly.
Like I said, you are merely redistributing wear. You replace all four at 60k vs replace two at a time at lower miles.

I'll most likely be going with 275/40/19 Michelin A/S 3+ on 19x10 wheels. I'd love to go for a strictly performance oriented tire, but living in PA, and daily driving my car, I need something all-season, but I'm guessing even these A/S tires will be slightly better than the stock PZero summer tires I had from the factory.

The Pilot SS that come on the 350's are flat from what I've seen. Not sure about the Nitto's. If I lived in a warmer climate I'd try the new Pilot Sport 4s that will be on some of the new 18' Mustangs. They're supposed to be really nice and have the flat sidewall look which I like.
